Fun and efficient when making authentic Asian stir-fry or deep-fry dishes, woks come in a variety of sizes and materials and even shapes. The most typical and authentic kind has a round bottom and is made from carbon steel. Round-bottomed woks, regardless of the materials used, are meant to be used over direct flame. Carbon steel does need to be seasoned well before use (and re-seasoned, from time to time).
