Although not essential to the basic kitchen, it is essential to certain cooking procedures (making candy and when deep-frying) and should be cared for properly in order to keep it in reliable working order. Never shock a thermometer (of any kind) by exposing it to abrupt temperature changes. Allow it to cool before washing. Sometimes, in order to check the accuracy of a thermometer that I've had for some time, I will clip two onto the same pot of oil. Always make sure that the mercury tip of a thermometer reaches half way down the depth of oil, for the most accuracy.
