Flour (extra-fancy durum wheat)
Finely ground semolina gives a "toothsome" quality to pasta that can't be achieved with regular semolina flour, which is ground too coarse. Look for "extra fancy" on the label, which indicates that it's been ground extra fine, which helps this type of flour to be easily integrated with wet ingredients when making your pasta dough.
