No need to wait for bread to become old to dry and turn into crackers, croutons or crumbs. Actually, I usually do this with the freshest bread- to capture the freshest taste. Toast at 375f till golden and crisp throughout- about 10 minutes. Let cool. If using, as above, store in an airtight jar (amazing with cheese and pates). Cubes or crumbs can go into the freezer to whip up an impromptu batch of croutons, stuffing, etc.
