Chunky applesauce with macerated raisins: Apples simmered and mashed with cinnamon sticks and apple juice and then forced through a food mill to remove skins-remove sticks before pureeing. Apples (peeled, cored) cut into chunks and simmered until just tender-These get folded into the smooth sauce along with plumped raisins, cinnamon, nutmeg, pure vanilla extract and sugar to taste.
