Candied sweet potatoes- parboil peeled chunks (covered) in salted water for 10 minutes. Potatoes will not be totally tender. Drain and place a#on a baking sheet lined with nonstick foil. Brush potatoes on all sides with melted butter and then maple syrup. Sprinkle tops with kosher salt. Can be done early/ let sit out, covered loosely with foil, roast in preheated 425f oven until hot throughout and some edges start to turn golden, about 20 min. Uncover, jack heat up to 450f and roast till they look like the photo- 10! to 20 minutes.
