Before assembling your quiche, set up. Here is a cooked dick breast that I’ve reheated briefly, a bowl of sautéed sliced leeks and another of sauteed mushrooms. I’ve also assembled my custard which is cream and eggs and salt and pepper. For a 10 inch quiche mixed 2 cups cream and 4 extra large eggs with some salt and pepper. I will use as much of this as I need to come 1/4 inch from the top of the rim of pastry after Adding my fillings. The oven should be preheating to 375F.
