A day of incredible rain, from beginning to (now) evening. I had all kinds of plans that needed to be canceled- I couldn’t shop the markets- So, I went into my fridge…😀 We had a salad of mixed greens- that I topped with chopped olives, roasted peppers, endive, blanched broccoli, grape tomatoes, chick peas, cucumbers and carrots- Along side was firm cooked eggs, Italian tuna (tuna packed in olive oil and drained) mixed with chopped celery and freshly ground black pepper. I roasted mushrooms with garlic confit oil and shallots AND- the biggest surprise of deliciousness… I took leftover roasted potato wedges, that I cut up, and re-roasted them at 400f until hot and crisp (Ahhh the perfect savory crouton!!!)- all of this was served with a homemade baguette (that I defrosted a heated until the crust woke up)- and my scallion vinaigrette.
