Muffin Mix

enough for 6 loaves or 48 muffins

Ingredients

  • 10 1/2 cups bleached flour
  • 3 tablespoons baking powder
  • 3 teaspoons baking soda
  • 2 1/4 teaspoons salt
  • 4 1/2 teaspoons cinnamon
  • 3 teaspoons nutmeg
  • 3 teaspoons ground ginger
  • 1 ½ teaspoons allspice
  • three pinches of cloves

Shopping List

Dry Goods
10 1/2 cups bleached flour
3 tablespoons baking powder
3 teaspoons baking soda

Spices & Baking
1 ½ teaspoons allspice
2 1/4 teaspoons salt
3 teaspoons ground ginger
3 teaspoons nutmeg
4 1/2 teaspoons cinnamon
three pinches of cloves

Use a whisk to thoroughly combine all the ingredients in an extra-large mixing bowl and sift this into another large bowl. Whisk again thoroughly, then spoon the mix into a canister with a tight-fitting lid. Store the canister on a cool dry pantry shelf.
