  2. Thanks for your question. Peeled garlic cloves will keep for a week or two in the refrigerator. This will depend on the original condition of the cloves. Fresh garlic, after being peeled, should be firm, shiny, pale colored and free of cuts or wrinkles. Once they become dimpled and/or start to take on a dull, deeper hue (more golden), that means they’re over the hill and could have an off taste.
