I’d like to share with you my favorite part of being in Israel-This is Hagay Ben Yehuda @hagaybread and I found him through a “fellow bread-head” on Instagram @odedroesler who I follow, who lives in Israel. Knowing about my upcoming trip, I wrote to him asking if he knew of any bakers that made bread in a home-based wood oven and he was kind enough to direct me to Hagay, who lives on Kibbutz Einstein (in Tel Aviv) and is a 5th generation bread baker-all by hand, all wood driven, all sourdough and he also gives bread workshops. (Saying he was “a find” is an understatement!!) I’m sharing Hagay with you, not just because he’s a wonderful baker and patient teacher-but because he has such a big, beautiful dream. In addition to selling his delicious breads at local farmers markets, not long ago, he started a seeding project of ancient wheat varieties native to Israel- working to bring these varieties back where they started- where they rightfully belong. His wheat fields are beautiful!!! (Did I mention that he is doing all the work himself, with his wife Noa?! Such hard work!) Thank you, Hagay, for being such an inspiration to me
